406 BBQ proudly represented Montana at the 2025 Hawai’i Food & Wine Festival, cooking alongside a lineup of nationally recognized chefs at the World of Wagyu, Wine & Whiskey event.
Stephen brought a menu built specifically for the occasion, including huckleberry pork belly bites (a nod to his adopted home in Montana) and a Samoan-inspired sweet roll dessert, blending Pacific Islander flavors with his signature smoked technique. It’s exactly the kind of dish that captures what makes 406 BBQ different: a Montana-based pitmaster who never left his island roots behind.
Sharing a stage with some of the country’s most respected chefs is no small feat, and the response from festival-goers made clear that 406 BBQ’s fusion approach to barbecue belongs on that stage. It’s an experience Stephen hopes to bring back to Hawai’i again soon, and one more example of how far a Kalispell-based BBQ business has traveled.
