Kalbi-Style Pork Steak

You don’t need expensive cuts to make incredible BBQ. At $2.49lb and 14 cut steaks, this is my new favorite Kalbi style cook. This entire recipe starts with a pork butt that I partially froze to make slicing easier. I got a 2-pack pork butt from Costco at $34. I separated the money muscle and sliced it into thin pork steaks, then saved the rest of the pork butt to make pulled pork later. One cut, two meals, and every dollar goes further. Ingredients

Kalbi marinade if you want a more in depth recipe:

  • 1.5 cups brown sugar
  • 1.5 cups shoyu
  • 1 cup water
  • 2 Tbsp sesame oil
  • 2 Tbsp miso paste
  • 3 Tbsp minced garlic
  • 2 Tbsp minced ginger
  • 1/4 cup puréed Japan pear
  • 2 Tbsp Thai chilies used as a substitute for Hawaiian chili pepper

Simple Recipe

  • 2 cups Uncle Yoshida’s Original Gourmet Sauce
  • 2 tbsp sesame oil
  • 1 Japanese pear peeled and puréed

Instructions

  • Semi-freeze the pork butt for 45–60 minutes until firm.
  • Separate the money muscle and slice into ¼-inch pork steaks.
  • Mix the marinade ingredients and coat the pork completely.
  • Marinate overnight.
  • Grill over medium-high heat for 3–5 minutes per side, brushing with additional marinade throughout the cook until beautifully caramelized.
  • You want to cook the pork til 195-205 degrees.
  • Rest for 5 minutes and serve with rice, mac salad, or your favorite sides.
